PIZZA PIZZA was originally written in 1984 and released on Fable Records in Australia.

I always loved the music of Louie Prima and I knew I could   also write a contemporary pizza song in that kind of semi-jazz style, which was also the style of Louie Armstrong.  The chord progression follows the musical template of 'When the Saints Go Marchin' In' which was intentional as I was doing a lot of shows with knock-up bands and I wanted a hot blue harp based song that I could play first time with any band without a single rehearsal. I just step on stage, tell the band to play 'Saints' and I sing 'Pizza Pizza'. Of course the melody and lyrics are totally different but the chords and the feel is the same.

I recorded in Melbourne with the production assistance of Mike Brady who also chipped in on the background singing. Mike is a long-time friend who was instrumental in the success of 'Shaddap You Face. ' He made the trip to Midem, France, on my behalf and placed it with 15 international labels!

1. Picture of me wearing 'Joe's Pizza' hat. I worked with the owner of 'Joe's Pizza' in Western Australia at a festival and loved wearing the hat  while I sang so he gave me one!

2. This is a shot of one of my own home-made pizzas. I have finally gotten my technique down so that I easily make them a couple times of week at home due to demand! Sometimes I have pizza making afternoons with my three grand daughters, 2,5 and 6. I make the dough and lay out a variety of ingredients in little bowls like paints and let them compose their own. The keys to my pizza:  the best ingredients for the toppings and - the most important part - the crust:  a light elastic dough in which the gluten has properly developed - achieved by making it the day before, refrigerating it, and stretching it gently the morning I plan to use it, then letting it rest for a couple more hours (gluten gluten gluten!) and finally pulling and tossing it into  shape. I keep it thin and don't care if there are a few holes in it as the cheese fills in the gaps and gets a nice crispy aspect which everyone loves. regards Joe
